Dinner tonight was homemade tomato soup. Store bought soups are so salt laden, so I started it out from scratch tonight. A few teaspoons of butter, an onion crudely chopped up, and a half dozen or so cloves of crushed garlic led the way. After 5 minutes I added a couple of pounds of cut up extra large Roma tomatoes, two stalks of sliced celery and a few carrots cut up as well. A few cups of low sodium chicken broth and the soup was on its way. To this I added Himalayan sea salt, freshly ground black pepper, and some kale and dulse. 20 minutes later, with the freshest of aromas already wafting in the air I added fresh basil, thyme and rosemary to the mixture. The whole batch went into the Vita Mix and poof, after a few seconds on high, a soup to die for appeared.  All that was left to do was to ladle it into a bowl and add some fresh feta and savor the taste, one spoonful at a time.
