Sweet potatoes and/or Yams

Green or red Peppers

Carrots

Celery

Green Onion

Cauliflower

Boil in 50/50 chicken stock and water for about 5 minutes

Saute slices of chicken breast and add it to the above.

Chop up an onion and saute it in coconut oil, to it add Yeo’s Malaysian curry powder (start with one tablespoon and add to adjust to taste)

Add to the vegetables and broth.

Add any seafood…the frozen assortment of shrimps, clams, scallops and mussels from Costco are a great addition. I also added some lagostinos, salmon and basa. A little of each.

Boil for a minute or so with the above. Add some coconut cream or milk

Cook/soak  rice noodles, drain well and dish them up in individual bowls. Add the broth medley. Garnish with cilantro, add a half of a cooked egg, bean sprouts and squeeze in some fresh lemon juice. Flavorful!
