JG Kombucha

1- 1 gallon glass container
8 bottles and caps
1 Scoby (mushroom)
1 gallon of purified water
3 black tea bags
2 green tea bags
1 cup of white sugar
Brew the tea bags in ¼ of the water, in a stainless steel pot.
Bring to a boil, let steep for 5 minutes
Remove tea bags
Add sugar
Stir well with a wooden or steel spoon
Pour tea mixture into 1 gallon container
Add Scoby
Cover
Store in a warm place, 78 degrees is perfect, warmer is better than cooler
Let is sit for 7-8 days
Remove the Scoby, placing it in a glass bowl
Add 1 cup of pure juice, not from concentrate
Stir
Using a sieve and a funnel, fill the 8 bottles to about an inch from the top
Then, using a measuring cup fill the bottles to the brim, overflowing
Cap, tightening securely
Store for another 3- 7 days at 78 or so degrees
Refrigerate, when cold, sample and enjoy.
Careful not to shake it to hard.
Repeat the steps above, re-using the Scoby
